Dill Pickle Parmesan Chicken is a tangy and crispy dish combining the bold flavors of dill pickles with the rich taste of parmesan cheese, creating a unique and satisfying meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle slices, chopped
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place flour in a shallow bowl. In a second bowl, whisk eggs and milk together. In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, dried dill, salt, and pepper.
  3. Dip each chicken breast first into the flour, shaking off excess, then into the egg mixture, and finally coat thoroughly with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Sear each coated chicken breast for 2-3 minutes per side until golden brown.
  5. Transfer seared chicken breasts to the prepared baking sheet and sprinkle chopped dill pickles evenly on top of each piece.
  6. Bake in the preheated oven for 15-20 minutes, or until chicken is cooked through and juices run clear.
  7. Remove from oven and let rest for a few minutes before serving.

Notes

For extra tang, serve with a side of ranch dressing or a dill pickle aioli dipping sauce.
