  • 6 cups day-old croissants, torn into pieces
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage, crumbled
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, Dijon mustard, salt, and black pepper.
  3. Layer torn croissant pieces evenly in the baking dish.
  4. Sprinkle cooked sausage, diced onion, and bell pepper over the croissants.
  5. Pour the egg mixture evenly over the layered ingredients.
  6. Top with shredded cheddar cheese.
  7. Cover with foil and refrigerate for at least 1 hour or overnight for best results.
  8. Remove foil and bake uncovered for 45-50 minutes, until the casserole is set and cheese is golden.
  9. Let cool slightly before serving. Garnish with chopped fresh parsley if desired.

Notes

For a vegetarian version, substitute sausage with sautéed mushrooms or spinach. Serve with fresh fruit or a green salad for a complete breakfast.
