This Crockpot Prime Rib Chili is a hearty and flavorful comfort food, perfect for a chilly evening. Tender prime rib, beans, and spices simmer all day in your slow cooker for a delicious and easy meal.

  • 1.5 lbs cooked prime rib, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 cup beef broth
  • 1 packet chili seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a large crockpot, combine the cubed prime rib, chopped onion, minced garlic, red bell pepper, and green bell pepper.
  2. Add the crushed tomatoes, kidney beans, black beans, pinto beans, beef broth, chili seasoning, cumin, smoked paprika, and cayenne pepper (if using).
  3. Stir well to combine all ingredients.
  4. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. Taste and adjust seasonings as needed. Add salt and pepper to taste.
  6. Serve hot, garnished with your favorite chili toppings such as shredded cheese, sour cream, and green onions.

Notes

For a richer flavor, brown the prime rib and vegetables in a skillet before adding them to the crockpot. You can also add a can of diced tomatoes with green chilies for extra heat.
