Crockpot French Dip Sandwiches

Tender, slow-cooked beef sliced thin and served on crusty rolls with flavorful au jus for dipping, these Crockpot French Dip Sandwiches are an easy and delicious comfort food perfect for any day.

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 6 sandwich rolls, split
  • Provolone cheese slices (optional)

Instructions

  1. Season the beef chuck roast generously with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat and brown the roast on all sides, about 3-4 minutes per side.
  3. Transfer the roast to a crockpot. Add sliced onions, garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
  4. Cover and cook on low for 8 hours or until the meat is very tender and easily shredded.
  5. Remove the roast from the crockpot and shred the beef with two forks.
  6. Strain the cooking liquid to remove solids and keep as au jus for dipping.
  7. To assemble sandwiches, layer shredded beef and a slice of provolone cheese on each roll. Toast under a broiler for 2-3 minutes to melt the cheese, if desired.
  8. Serve sandwiches hot with warm au jus on the side for dipping.

Notes

For extra flavor, add a splash of red wine to the crockpot broth before cooking or top sandwiches with caramelized onions.
