  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz penne pasta
  • 1 cup shredded Parmesan cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rub the chicken breasts with Cajun seasoning evenly.
  2. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side until browned. Transfer to the crock pot.
  3. In the crock pot, add garlic, diced onion, green bell pepper, diced tomatoes, chicken broth, and heavy cream. Stir gently to combine.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and cooked through.
  5. Remove the chicken breasts and shred them using two forks. Return shredded chicken to the crock pot and mix well.
  6. Cook pasta according to package instructions until al dente, then drain.
  7. Stir the cooked pasta into the crock pot with the creamy Cajun chicken mixture.
  8. Add shredded Parmesan cheese and season with salt and pepper to taste. Stir until cheese is melted and the sauce is creamy.
  9. Garnish with fresh chopped parsley and serve warm.

Notes

For extra spice, add a pinch of cayenne pepper or serve with a side of garlic bread for a complete meal.
