Crock Pot Chicken and Rice

This comforting Crock Pot Chicken and Rice recipe delivers tender chicken and perfectly cooked rice in a rich, flavorful sauce, making an easy and delicious meal for any day.

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice, uncooked
  • 2 1/2 cups chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the chicken breasts for 2-3 minutes per side. Transfer chicken to the crock pot.
  2. Add chopped onion, garlic, and uncooked rice evenly over and around the chicken.
  3. Pour chicken broth over the ingredients and sprinkle thyme, paprika, salt, and pepper on top.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and rice is tender.
  5. About 30 minutes before serving, stir in frozen peas and carrots, then cover and continue cooking until vegetables are tender.
  6. Shred or slice chicken before serving, mixing well with rice and vegetables.

For extra flavor, garnish with freshly chopped parsley and serve with a side of steamed vegetables or a crisp green salad.
