Crock Pot Cheesesteak Tortellini

This Crock Pot Cheesesteak Tortellini combines tender beef, peppers, onions, and creamy cheese tortellini slow-cooked to perfection for an easy and flavorful comfort meal.

  • 1 lb thinly sliced beef sirloin or ribeye
  • 1 package (20 oz) frozen cheese tortellini
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup shredded provolone cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat and quickly sear the thinly sliced beef for 2-3 minutes until browned but not fully cooked. Transfer to the crock pot.
  2. Add sliced onions, green and red bell peppers, and minced garlic to the crock pot.
  3. Pour in the beef broth, then season with oregano, crushed red pepper flakes, salt, and black pepper. Stir to combine.
  4. Cover and cook on low for 6 hours or on high for 3 hours until beef is tender and vegetables are soft.
  5. About 20 minutes before serving, stir in the frozen cheese tortellini and shredded provolone and mozzarella cheeses.
  6. Cover and cook on high for the remaining 20 minutes until tortellini is cooked through and cheese is melted.
  7. Stir gently to combine and serve hot.

Notes

For extra cheesiness, sprinkle additional shredded provolone on top just before serving. Pair with a fresh green salad or crusty bread.
