These Crispy Baked Ground Turkey Black Bean Tacos offer a flavorful, healthy twist on classic tacos, combining lean turkey and protein-rich black beans baked to golden perfection.

  • 1 lb ground turkey
  • 1 cup black beans, drained and rinsed
  • 1 packet taco seasoning
  • 1/2 cup finely diced onion
  • 2 cloves garlic, minced
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
  3. Add ground turkey to the skillet, breaking it apart. Cook until browned and no longer pink.
  4. Stir in taco seasoning, black beans, salt, and pepper. Cook for another 3-4 minutes until heated through.
  5. Warm tortillas slightly to make them pliable. Spoon turkey mixture evenly into each tortilla and fold.
  6. Place tacos on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until tortillas are crispy and golden.
  8. Remove from oven and top with shredded lettuce, diced tomatoes, cheese, and cilantro.
  9. Serve immediately with your favorite salsa or avocado.

Notes

For extra crispiness, brush the tortillas lightly with olive oil before baking. Serve with a side of lime wedges for added zest.
