  • 2 cups cooked rice
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1/2 cup sliced mushrooms
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Add onions, garlic, and mushrooms, sauté until soft.
  3. Stir in flour and cook for 1 minute to form a roux.
  4. Slowly whisk in heavy cream and mayonnaise until sauce thickens.
  5. Add cheddar cheese and Parmesan cheese, stirring until melted and smooth.
  6. Season with salt, pepper, and paprika.
  7. Fold in cooked rice and shrimp, mixing well to combine.
  8. Transfer mixture into a greased casserole dish and spread evenly.
  9. Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
  10. Garnish with fresh parsley before serving.

Notes

For an extra crunchy topping, sprinkle breadcrumbs mixed with melted butter on top before baking.
