Creamy Roast Garlic and Lemon Pasta Sauce

This creamy roast garlic and lemon pasta sauce combines roasted garlic’s deep flavor with a bright lemony zest, creating a luscious and refreshing dish perfect for any pasta night.

  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces cooked pasta (such as fettuccine or linguine)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35-40 minutes until soft.
  2. Remove the roasted garlic cloves from the skin and mash into a smooth paste.
  3. In a skillet, heat the remaining 1 tablespoon olive oil over medium heat. Add the cream and bring to a gentle simmer.
  4. Stir in the roasted garlic paste, Parmesan cheese, lemon zest, lemon juice, salt, pepper, and red pepper flakes if using. Cook for 3-4 minutes until sauce thickens slightly.
  5. Toss the cooked pasta into the sauce until thoroughly coated.
  6. Garnish with chopped fresh parsley and serve immediately.

Notes

For an extra creamy texture, stir in a tablespoon of butter just before serving or top with toasted breadcrumbs for added crunch.
