  • 500g potato gnocchi
  • 2 cups fresh spinach, washed and chopped
  • 150g feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the potato gnocchi to the skillet and cook until they start to brown and crisp, about 3-4 minutes.
  3. Pour in the heavy cream and bring to a gentle simmer.
  4. Add the chopped spinach and cook until wilted, about 2 minutes.
  5. Stir in the crumbled feta and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.
  6. Season with salt and black pepper to taste.
  7. Serve warm, garnished with extra feta or Parmesan if desired.
