Creamy Cajun Potato Soup with Andouille Sausage

This creamy Cajun potato soup combines tender potatoes and smoky andouille sausage with a flavorful blend of spices for a hearty and comforting meal.

  • 4 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 pound andouille sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned. Remove and set aside.
  2. In the same pot, add onion, garlic, celery, and green bell pepper. Sauté until vegetables are tender, about 5 minutes.
  3. Add diced potatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir to coat the vegetables with spices.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Using a potato masher or immersion blender, partially mash the potatoes to thicken the soup while leaving some chunks for texture.
  6. Stir in the heavy cream and cooked andouille sausage. Heat through for another 5 minutes without boiling.
  7. Adjust seasonings if needed. Serve hot garnished with chopped green onions.

Notes

For extra heat, add a dash of cayenne pepper or serve with crusty bread to soak up the creamy soup.
