Cranberry Orange Bread with Glaze

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1 cup fresh or frozen cranberries, roughly chopped
  • Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the orange juice and orange zest.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped cranberries.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. For the Glaze: In a small bowl, whisk together the powdered sugar and orange juice until smooth. Add more orange juice if needed to reach desired consistency.
  9. Drizzle the glaze over the cooled bread. Let the glaze set before slicing and serving.

Notes

For an extra burst of flavor, toast the bread slices lightly before serving. You can also add 1/2 cup of chopped walnuts or pecans to the batter.
