  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes with green chilies (like Rotel), drained
  • 1/2 cup cooked crab meat, picked over for shells
  • 1/2 cup cooked shrimp, chopped
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar, and Monterey Jack cheeses until smooth.
  3. Add the diced tomatoes with green chilies, crab meat, shrimp, green onions, garlic, cumin, smoked paprika, salt, and black pepper. Mix well to combine evenly.
  4. Transfer the mixture to an oven-safe baking dish and spread evenly.
  5. Bake for 20-25 minutes, or until the queso is bubbly and golden around the edges.
  6. Remove from oven and let cool slightly before garnishing with fresh cilantro if desired.
  7. Serve warm with tortilla chips, crackers, or sliced veggies.

Notes

For extra heat, add finely chopped jalapeños or a dash of hot sauce. This dip is best enjoyed warm and pairs wonderfully with crisp tortilla chips or fresh vegetables.
