A delicious and healthy cottage cheese flatbread pizza that combines creamy cottage cheese with fresh veggies on a crispy flatbread base, perfect for a quick lunch or dinner.

  • 1 flatbread (6-8 inches)
  • 1/2 cup cottage cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup fresh spinach leaves
  • 1/4 red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbread on a baking sheet and brush lightly with olive oil.
  3. Spread the cottage cheese evenly over the flatbread.
  4. Top with shredded mozzarella, cherry tomatoes, spinach, and red onion slices.
  5. Sprinkle dried oregano, salt, and pepper over the toppings.
  6. Bake in the preheated oven for 10-12 minutes until the cheese is melted and the flatbread is crispy.
  7. Remove from oven, slice, and serve warm.
