A Bowl of Copycat Paneras Potato Soup

  • 5 slices bacon, cooked and crumbled
  • 4 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 3 cups peeled and cubed russet potatoes
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh chives, for garnish
  • 1/2 cup shredded cheddar cheese, for garnish

Instructions

  1. In a large pot or Dutch oven, cook bacon until crisp. Remove bacon and set aside, reserving 2 tablespoons of bacon grease in the pot.
  2. Add butter to the pot with the bacon grease. Melt over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in flour until well combined. Gradually whisk in chicken broth until smooth.
  4. Add potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. Remove from heat and use an immersion blender to partially blend the soup, leaving some chunks of potato for texture. Alternatively, carefully transfer about 2 cups of soup to a regular blender and blend until smooth, then return it to the pot.
  6. Stir in heavy cream and milk. Heat through, but do not boil.
  7. Ladle soup into bowls and garnish with crumbled bacon, chives, and shredded cheddar cheese. Serve immediately.

Notes

For a thicker soup, blend more of the potatoes. For a thinner soup, add more chicken broth or milk. Serve with crusty bread for dipping.
