This Coconut Curry Baked Cod features tender cod fillets baked in a fragrant coconut curry sauce, delivering a flavorful and healthy meal perfect for dinner.

  • 4 cod fillets (about 6 oz each)
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in red curry paste and cook for another minute.
  4. Add coconut milk and lime juice to the skillet; stir well and bring to a simmer.
  5. Season the cod fillets with salt and pepper.
  6. Place the cod fillets in a baking dish and pour the coconut curry sauce over them.
  7. Bake in the preheated oven for 15-18 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Garnish with fresh cilantro leaves before serving.

Notes

Serve with steamed jasmine rice or quinoa and a side of sautéed greens for a complete meal.
