Citrus Berry Burnt Cheesecake

A luscious burnt cheesecake infused with bright citrus flavors and topped with fresh mixed berries for a perfect balance of sweet and tangy.

  • 500g cream cheese, softened
  • 200g granulated sugar
  • 3 large eggs
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh orange juice
  • 150g mixed berries (blueberries, raspberries, strawberries)
  • 2 tbsp all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat the oven to 210°C (410°F). Grease a 20cm springform pan and line the base with parchment paper.
  2. In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in the heavy cream, vanilla extract, lemon and orange zests, and citrus juices until fully incorporated.
  5. Sift the flour and salt into the mixture and gently fold to combine.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes until the top is deeply caramelized and burnt-looking but the center still slightly wobbly.
  7. Remove from oven and allow to cool to room temperature; then refrigerate for at least 4 hours or overnight.
  8. Before serving, top the cheesecake with fresh mixed berries.
  9. Slice and enjoy the perfect contrast of burnt caramelized top, creamy interior, and fresh tart berries.

Notes

For an extra citrus punch, drizzle a little fresh lemon glaze on top before serving or add a sprig of mint for garnish.
