Cinnamon-Swirled Cookies

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. In a small bowl, combine the brown sugar and cinnamon.
  7. Roll out dough on a lightly floured surface into a rectangle about ¼ inch thick.
  8. Sprinkle the cinnamon-sugar mixture evenly over the dough.
  9. Carefully roll the dough tightly into a log, then slice into ½-inch thick cookies.
  10. Place cookies on the prepared baking sheets, spacing them about 2 inches apart.
  11. Bake for 12-15 minutes or until edges are golden brown.
  12. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

For an extra touch, drizzle melted white chocolate over cooled cookies or serve with a cup of hot chai tea.
