  • 2 cups brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, mix the melted butter and brown sugar until smooth.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Mix the granulated sugar and remaining cinnamon, then sprinkle evenly over the batter.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the blondies to cool completely in the pan before lifting them out using the parchment paper.
  10. Cut into squares and serve.
