Delicious Cinnamon Roll Protein Crepes

Ingredients

  • 1/2 cup protein pancake mix
  • 1/4 cup unsweetened applesauce
  • 1/2 cup unsweetened almond milk
  • 1 egg white
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 tbsp granulated sweetener
  • 1 tbsp cream cheese, softened
  • 1 tbsp unsweetened almond milk (for filling)
  • Pinch of cinnamon (for filling)

Instructions

  1. In a medium bowl, whisk together the protein pancake mix, applesauce, almond milk, egg white, vanilla extract, and cinnamon until smooth.
  2. Heat a lightly oiled crepe pan or non-stick skillet over medium heat.
  3. Pour about 1/4 cup of batter onto the hot pan, swirling to create a thin, even circle.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. While the crepe is cooking, prepare the filling by mixing the softened cream cheese, 1 tbsp almond milk, granulated sweetener, and a pinch of cinnamon in a small bowl until smooth.
  6. Once the crepe is cooked, spread the cream cheese filling evenly over the surface.
  7. Roll up the crepe tightly.
  8. Slice and serve immediately.

Notes

For an extra touch of sweetness, drizzle with a sugar-free syrup or sprinkle with a little extra cinnamon. You can also add chopped nuts or fruit to the filling.
