A festive and delicious Christmas Sugar Cookie Pie featuring a buttery sugar cookie crust filled with creamy vanilla custard and topped with colorful holiday sprinkles.

  • 1 batch sugar cookie dough (homemade or store-bought)
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup colorful holiday sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. Press the sugar cookie dough evenly into the bottom and up the sides of the pie dish to form a crust.
  3. In a mixing bowl, whisk together the sugar, flour, and salt.
  4. Beat in the eggs one at a time until fully incorporated.
  5. Gradually add the heavy cream and vanilla extract, mixing until smooth.
  6. Pour the custard filling into the sugar cookie crust.
  7. Bake the pie for 35-40 minutes, or until the filling is set and the crust is golden brown.
  8. Remove from oven and immediately sprinkle the colorful holiday sprinkles evenly over the top.
  9. Allow the pie to cool completely before serving to let the filling fully set.
