This festive Christmas salad is bursting with holiday flavors! A vibrant mix of greens, cranberries, pecans, and goat cheese, all tossed in a tangy honey mustard dressing.

Ingredients

  • 5 ounces mixed salad greens
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans, roughly chopped
  • 4 ounces goat cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pomegranate seeds (optional)

For the Honey Mustard Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.
  2. In a large bowl, combine the mixed salad greens, dried cranberries, candied pecans, goat cheese, red onion, and pomegranate seeds (if using).
  3. Pour the honey mustard dressing over the salad and toss gently to coat.
  4. Serve immediately.

Notes

For an extra festive touch, add orange segments or roasted sweet potatoes to the salad. You can also substitute the candied pecans with walnuts or almonds.
