Christmas Breakfast Casserole

  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 4 cups cubed day-old bread (French or Italian)
  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and thyme until well combined.
  3. Place the cubed bread evenly in the prepared baking dish.
  4. Sprinkle cooked sausage, chopped bell pepper, and onion evenly over the bread cubes.
  5. Pour the egg mixture evenly over the bread and sausage layers.
  6. Top the casserole with shredded cheddar cheese and drizzle melted butter over the top.
  7. Cover the baking dish with foil and bake for 40 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the top is golden and the egg is fully set.
  9. Let the casserole cool for 5 minutes before serving. Slice and enjoy your festive breakfast!

Notes

For a vegetarian version, substitute sausage with sautéed mushrooms or spinach. Serve with a side of fresh fruit and a drizzle of maple syrup for a sweet contrast.
