Chocolate Mint Pie

This rich and creamy Chocolate Mint Pie combines decadent chocolate with refreshing mint for a perfect dessert treat that’s both indulgent and invigorating.

  • 1 9-inch chocolate cookie crust
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup sugar
  • 4 large egg yolks
  • 1/4 cup unsalted butter
  • 1 teaspoon peppermint extract
  • Whipped cream, for topping
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Bake the chocolate cookie crust for 8 minutes. Let cool completely.
  2. In a saucepan, heat the heavy cream until it just begins to simmer.
  3. Remove from heat and add chopped semi-sweet chocolate. Let sit for 2 minutes, then stir until smooth.
  4. In a separate bowl, whisk together sugar and egg yolks until pale and thickened.
  5. Gradually pour the chocolate mixture into the egg yolks, whisking constantly.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens (about 5 minutes). Do not boil.
  7. Remove from heat and stir in butter and peppermint extract until fully incorporated.
  8. Pour the filling into the cooled crust and refrigerate for at least 4 hours or until set.
  9. Top with whipped cream and garnish with fresh mint leaves before serving.

Notes

For an extra festive touch, sprinkle crushed peppermint candies on top of the whipped cream before serving.
