Chocolate Mint Crinkles

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, beat granulated sugar, brown sugar, and vegetable oil until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in peppermint and vanilla extracts.
  6. Gradually add the dry ingredients to the wet mixture and stir until combined.
  7. Cover dough and chill for at least 1 hour.
  8. Roll dough into 1-inch balls, then coat each ball in powdered sugar before placing on prepared baking sheet.
  9. Bake for 10-12 minutes until edges are set but centers are soft.
  10. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

For an extra festive touch, drizzle melted white chocolate over cooled crinkles or add a few drops of green food coloring to the dough.
