  • 1 cup chocolate cookie crumbs
  • 3 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup semi-sweet chocolate chips, melted
  • Mini chocolate gnome figurines or chocolate decorations for garnish

Instructions

  1. Preheat oven to 325°F (165°C) and line a muffin tin with cupcake liners.
  2. Mix chocolate cookie crumbs and melted butter until combined; press into the bottom of each liner to form a crust.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and sour cream until fully incorporated.
  6. Fold melted chocolate chips into the batter gently.
  7. Pour batter over the crusts, filling each about 3/4 full.
  8. Bake 18-20 minutes until the edges are set but centers slightly jiggle.
  9. Cool to room temperature, then refrigerate for at least 4 hours.
  10. Garnish with mini chocolate gnome figurines before serving.

Notes

For an extra festive touch, drizzle melted white chocolate over the cheesecakes or add fresh raspberries alongside the gnome decorations.
