Chinese Steamed Cod Fish with Ginger Scallion Sauce

A delicate and healthy Chinese steamed cod fish recipe topped with a fragrant ginger scallion sauce that enhances natural flavors for a light and satisfying meal.

  • 1 lb fresh cod fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 3 tablespoons vegetable oil
  • 3 stalks scallions, thinly sliced
  • 1 tablespoon fresh ginger, julienned
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the cod fillets and pat dry with paper towels. Season both sides with salt and white pepper.
  2. Place the cod on a heatproof plate suitable for steaming. Sprinkle Shaoxing wine over the fish.
  3. Set up a steamer or use a wok with a steaming rack. Bring water to a boil.
  4. Place the plate with cod into the steamer, cover, and steam over medium-high heat for 8-10 minutes, or until the fish is opaque and flakes easily.
  5. While the fish steams, heat vegetable oil in a small pan until hot but not smoking.
  6. Combine soy sauce, sesame oil, sliced scallions, and julienned ginger in a heatproof bowl or small saucepan.
  7. Pour the hot oil over the scallion and ginger mixture to release their fragrance and slightly cook them.
  8. Once the fish is done steaming, carefully remove it from the steamer and pour the ginger scallion sauce evenly over the cod.
  9. Garnish with fresh cilantro if desired and serve immediately with steamed rice.

Notes

For an extra flavor boost, drizzle a little hot chili oil on top before serving or add thinly sliced red chili peppers to the scallion and ginger mixture.
