Chicken with Boursin Sauce

This Chicken with Boursin Sauce is a quick and easy weeknight meal that’s packed with flavor. Tender chicken breasts are smothered in a creamy, garlicky Boursin cheese sauce.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 (5.2 ounce) package Boursin cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add garlic to the skillet and cook for 1 minute, or until fragrant.
  4. Stir in Boursin cheese and chicken broth until the cheese is melted and smooth.
  5. Stir in heavy cream and parsley. Season with salt and pepper to taste.
  6. Return chicken to the skillet and coat with sauce.
  7. Simmer for 2-3 minutes, or until heated through.
  8. Serve immediately.

Notes

Serve over pasta, rice, or mashed potatoes for a complete meal. You can also add vegetables like broccoli or asparagus to the skillet while the sauce simmers.
