  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Pita bread, for serving
  • Toppings: hummus, tahini sauce, chopped tomatoes, cucumbers, red onion, lettuce

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, turmeric, coriander, cinnamon, cayenne pepper (if using), salt, and pepper.
  2. Add the chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight.
  3. Preheat oven to 450°F (232°C).
  4. Line a baking sheet with parchment paper. Arrange the marinated chicken in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and slightly browned.
  6. Let the chicken rest for a few minutes before slicing or shredding.
  7. Warm the pita bread.
  8. Serve the chicken shawarma in pita bread with your favorite toppings.

Notes

For extra flavor, grill the chicken instead of baking. You can also add a dollop of garlic sauce or a drizzle of hot sauce for an extra kick.
