Comforting homemade chicken noodle soup close-up

A comforting and classic chicken noodle soup made with tender chicken, fresh vegetables, and hearty noodles, perfect for warming up on a chilly day.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened.
  2. Add carrots and celery and cook for 5 minutes, stirring occasionally.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, thyme, and parsley. Reduce heat and simmer for 10 minutes.
  5. Stir in egg noodles and cook until tender, about 7–8 minutes.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For extra flavor, garnish with fresh parsley and a squeeze of lemon juice before serving.
