Chicken Ginger Rice is a fragrant and flavorful one-pot meal combining tender chicken with aromatic ginger and fluffy rice, perfect for a quick and satisfying dinner.

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Instructions

  1. Rinse the jasmine rice under cold water until water runs clear; drain and set aside.
  2. Heat vegetable oil in a large skillet or pot over medium heat. Add onions and sauté until translucent, about 3 minutes.
  3. Add minced garlic and ginger; cook for another 1-2 minutes until fragrant.
  4. Add chicken pieces, season with salt and pepper, and cook until lightly browned on all sides, about 5-7 minutes.
  5. Pour in chicken broth and soy sauce, then stir in the rinsed rice.
  6. Bring mixture to a boil, then reduce heat to low and cover. Let simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  7. Turn off the heat and let it rest covered for 5 minutes. Fluff the rice with a fork.
  8. Garnish with sliced green onions before serving.

Notes

For added flavor, stir in a teaspoon of toasted sesame oil before serving or top with a fried egg for a heartier meal.
