  • 1 cup diced cooked chicken
  • 1 cup diced ham
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1 cup shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken, ham, and onion and cook until the onion is softened, about 5 minutes.
  2. Stir in the flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in the chicken broth until smooth.
  4. Bring the soup to a simmer, then reduce heat and simmer for 10 minutes, stirring occasionally.
  5. Stir in the milk, Dijon mustard, and black pepper. Heat through, but do not boil.
  6. Remove from heat and stir in the Swiss cheese until melted.
  7. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use heavy cream instead of milk. Serve with crusty bread for dipping.
