chicken and zucchini bake

This Chicken and Zucchini Bake is a healthy and delicious meal perfect for a weeknight dinner. Tender chicken and zucchini are baked together in a flavorful sauce for a simple and satisfying dish.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned on all sides.
  3. Add onion, bell pepper, and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a simmer.
  5. Add zucchini slices to the skillet and stir to combine.
  6. Pour the mixture into a 9×13 inch baking dish.
  7. Sprinkle with Parmesan cheese.
  8. Bake for 20-25 minutes, or until the chicken is cooked through and the zucchini is tender.
  9. Let stand for a few minutes before serving.

Notes

Serve over rice, quinoa, or pasta for a complete meal. You can also add other vegetables like mushrooms or spinach.
