Chicken and Spinach Casserole

Beautiful homemade chicken and spinach casserole

A hearty and nutritious Chicken and Spinach Casserole combining tender chicken, fresh spinach, and a creamy sauce baked to golden perfection.

  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, chopped
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup cooked rice or pasta (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, chopped spinach, sour cream, mayonnaise, cheddar cheese, Parmesan cheese, onion, garlic, salt, pepper, and thyme. Mix well.
  3. If using, fold in the cooked rice or pasta until evenly distributed.
  4. Transfer the mixture into a greased casserole dish and spread evenly.
  5. Bake uncovered for 25–30 minutes, or until bubbly and the top is lightly golden.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, sprinkle some breadcrumbs mixed with melted butter on top before baking for a crispy crust.
