Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • 1 cup (90g) vital wheat gluten
  • 1/2 cup (40g) vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (240ml) nonfat Greek yogurt
  • 1 tbsp honey
  • 1 egg, lightly beaten (for egg wash)
  • Everything bagel seasoning, for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, vital wheat gluten, protein powder, baking powder, and salt.
  3. Add the Greek yogurt and honey to the dry ingredients. Mix until a dough forms. It will be slightly sticky.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  5. Divide the dough into 4 equal pieces. Roll each piece into a rope and shape into a bagel. Pinch the ends together to seal.
  6. Place the bagels on the prepared baking sheet.
  7. Brush the tops of the bagels with the egg wash and sprinkle with everything bagel seasoning, if desired.
  8. Bake for 20-25 minutes, or until golden brown.
  9. Let cool on a wire rack before slicing and serving.

Notes

For a sweeter bagel, add an extra tablespoon of honey to the dough. Store leftover bagels in an airtight container at room temperature for up to 2 days or in the freezer for longer storage.
