Homemade Cheesy Potato Skins

These cheesy potato skins are a delicious appetizer or snack, perfect for game day or any gathering. Crispy potato skins are loaded with cheese and your favorite toppings for a truly satisfying treat.

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce several times with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until potatoes are tender.
  5. Let potatoes cool slightly, then cut them in half lengthwise.
  6. Scoop out the potato flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped potato for another use.
  7. Place potato skins on a baking sheet and sprinkle with cheddar cheese and bacon.
  8. Bake for 5-10 minutes, or until cheese is melted and bubbly.
  9. Top with sour cream and green onions before serving.
