  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 4 medium potatoes, peeled and cubed
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Optional toppings: sour cream, green onions, bacon bits

Instructions

  1. In a large pot or Dutch oven, brown ground beef over medium-high heat. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Pour in chicken broth and diced tomatoes. Add cubed potatoes, Italian seasoning, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.

For a richer flavor, use beef broth instead of chicken broth. You can also add other vegetables like carrots or celery.
