  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded Gruyere cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to create a roux.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat and simmer for 5 minutes, or until sauce has thickened slightly.
  5. Remove from heat and stir in salt, pepper, and nutmeg.
  6. Add Gruyere and cheddar cheese to the sauce, reserving 1/2 cup for topping. Stir until cheese is melted and sauce is smooth.
  7. Arrange a layer of potato slices in the prepared baking dish. Pour a portion of the cheese sauce over the potatoes. Repeat layers until all potatoes and sauce are used, ending with a layer of sauce.
  8. Sprinkle reserved cheese and Parmesan cheese over the top.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes, or until potatoes are tender and top is golden brown.
  10. Let stand for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk. Add a sprinkle of paprika on top before baking for a touch of color and warmth.
