Ingredients

Scale
  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 1 pound Gruyère cheese, shredded
  • 8 ounces Emmental cheese, shredded
  • 2 tablespoons cornstarch
  • 2 tablespoons kirsch (cherry brandy)
  • Pinch of nutmeg
  • Pinch of white pepper

Instructions

  1. Rub the inside of a fondue pot with the cut sides of the garlic clove. Discard the garlic.
  2. Pour the white wine and lemon juice into the pot and bring to a simmer over medium heat.
  3. In a bowl, toss the Gruyère and Emmental cheeses with the cornstarch.
  4. Gradually add the cheese mixture to the simmering wine, stirring constantly in a figure-eight motion to prevent clumping.
  5. Continue stirring until the cheese is completely melted and smooth.
  6. Stir in the kirsch, nutmeg, and white pepper.
  7. Keep the fondue warm over a low heat source, such as a fondue burner.
  8. Serve immediately with crusty bread, vegetables, and fruit for dipping.

Notes

For a richer flavor, try adding a splash of dry sherry or a dash of hot sauce to the fondue.
