Cattle Drive Casserole is a hearty and flavorful baked dish combining ground beef, vegetables, and cheese, perfect for a comforting family dinner.

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 cup sliced mushrooms
  • 1 cup frozen mixed vegetables
  • 2 cups cooked pasta (penne or elbow macaroni)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onions and mushrooms until soft.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Drain excess fat from the skillet.
  5. Stir in the frozen mixed vegetables, garlic powder, salt, and pepper; cook for 2–3 minutes.
  6. In a large bowl, combine the cooked beef and vegetable mixture, cooked pasta, cream of mushroom soup, and milk. Mix well.
  7. Pour the mixture into a greased 9×13 inch casserole dish.
  8. Sprinkle shredded cheddar cheese evenly over the top.
  9. Bake uncovered for 25–30 minutes until the casserole is bubbly and the cheese is melted and golden.
  10. Let cool for 5 minutes before serving.

Notes

For added flavor, try topping with crushed tortilla chips or breadcrumbs before baking for a crispy crust.
