Carrot Cake Oatmeal Cookies Freshly Baked

These Carrot Cake Oatmeal Cookies are soft, chewy, and packed with the warm spices and flavors of carrot cake. A delicious and healthy-ish treat that’s perfect for breakfast, a snack, or dessert!

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • ½ cup raisins or chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the shredded carrots and raisins or walnuts (if using).
  6. Drop by rounded tablespoons onto the prepared baking sheets.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a cream cheese frosting drizzle, whisk together 4 ounces of softened cream cheese, 1 cup of powdered sugar, and 2 tablespoons of milk until smooth. Drizzle over cooled cookies.
