carrot and celery soup

A comforting carrot and celery soup, blending fresh vegetables into a creamy, soothing dish perfect for any season.

Ingredients

  • 4 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until translucent, about 5 minutes.
  3. Add carrots and celery; cook for another 5 minutes, stirring occasionally.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  6. Use an immersion blender or transfer soup to a blender to puree until smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For a creamier texture, add a splash of coconut milk or cream before blending.
