  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Caramel Apple Topping:
  • 3 medium apples, peeled, cored, and diced
  • ¼ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 4 tablespoons unsalted butter
  • ¼ cup heavy cream
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • Caramel sauce, for drizzling (optional)

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9×13 inch baking pan.
  2. Bake the Crust: Bake the crust for 8-10 minutes, or until lightly golden. Let cool slightly.
  3. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
  4. Pour Filling: Pour the cheesecake filling over the cooled crust.
  5. Make the Caramel Apple Topping: In a large skillet, melt butter over medium heat. Add apples, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Cook, stirring occasionally, until apples are tender and the mixture is bubbly, about 8-10 minutes. Stir in heavy cream and cook for another minute until slightly thickened.
  6. Add Topping: Spoon the caramel apple topping evenly over the cheesecake filling.
  7. Bake the Bars: Bake for 25-30 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center.
  8. Cool and Chill: Let the bars cool completely in the pan, then refrigerate for at least 3 hours before cutting into squares.
  9. Serve: Drizzle with caramel sauce before serving, if desired.

Notes

For an extra decadent touch, add a layer of salted caramel to the bottom of the crust before adding the cheesecake filling.
