  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 large egg yolks
  • Whipped cream, for serving (optional)
  • Butterscotch chips, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, melt butter and brown sugar together, stirring constantly until smooth.
  3. Bring the mixture to a boil, then reduce heat and simmer for 2 minutes, stirring constantly to prevent burning.
  4. Remove from heat and stir in heavy cream, salt, and vanilla extract.
  5. In a separate bowl, whisk egg yolks. Gradually whisk a small amount of the hot butterscotch mixture into the egg yolks to temper them.
  6. Pour the tempered egg yolk mixture into the saucepan with the remaining butterscotch mixture. Whisk constantly until smooth and thickened, about 1-2 minutes.
  7. Pour the butterscotch filling into the prepared graham cracker crust.
  8. Bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
  9. Let cool completely before refrigerating for at least 2 hours.
  10. Garnish with whipped cream and butterscotch chips, if desired, before serving.
