This hearty Butternut Squash and Turkey Chili blends lean turkey with sweet, tender butternut squash for a nutritious and flavorful twist on classic chili, perfect for a cozy meal.

  • 1 lb ground turkey
  • 2 cups butternut squash, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: chopped cilantro and lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  2. Add minced garlic and cook for 1 more minute until fragrant.
  3. Add ground turkey to the pot, breaking it apart with a spoon, and cook until browned and no longer pink.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper, coating the turkey evenly.
  5. Add diced butternut squash, black beans, diced tomatoes (with juices), and chicken broth. Stir to combine.
  6. Bring the chili to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes until squash is tender and flavors meld.
  7. Adjust seasoning if needed. Serve hot topped with chopped cilantro and lime wedges if desired.

Notes

For extra heat, add a diced jalapeño or a pinch of cayenne pepper when cooking the onions.
