  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/4 cup cold vegetable shortening, cut into cubes
  • 5-7 tablespoons ice water
  • 1 cup heavy cream
  • 1/2 cup honey
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust: In a large bowl, whisk together the flour and salt. Cut in the butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. On a lightly floured surface, roll out the dough to a 12-inch circle. Transfer to a 9-inch pie plate. Trim and crimp the edges.
  4. Make the filling: Preheat oven to 375°F (190°C). In a medium saucepan, combine the heavy cream, honey, sugar, and salt. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer and the honey starts to caramelize slightly (about 8-10 minutes). Be careful not to burn it.
  5. In a separate bowl, whisk together the egg yolks and cornstarch until smooth. Gradually whisk in a small amount of the hot cream mixture to temper the eggs. Then, pour the egg yolk mixture into the saucepan with the remaining cream mixture.
  6. Cook over medium-low heat, stirring constantly, until the filling thickens (about 2-3 minutes). Remove from heat and stir in the vanilla extract.
  7. Pour the filling into the prepared pie crust. Bake for 30-35 minutes, or until the crust is golden brown and the filling is set but still slightly jiggly in the center.
  8. Let the pie cool completely on a wire rack before serving.

Notes

Serve chilled or at room temperature. A dollop of whipped cream or a scoop of vanilla ice cream makes a delicious addition!
