A Delicious Broccoli Cheese Rice Casserole

This comforting Broccoli Cheese Rice Casserole is a classic side dish or vegetarian main course. It’s creamy, cheesy, and packed with tender broccoli and fluffy rice – perfect for a family meal!

  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth (or vegetable broth)
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups cooked broccoli florets
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  3. In a large bowl, whisk together cream of mushroom soup, milk, mayonnaise, onion powder, garlic powder, and pepper.
  4. Stir in the cooked rice, broccoli florets, and 1 cup of shredded cheddar cheese.
  5. Pour the mixture into the prepared baking dish.
  6. In a small bowl, combine bread crumbs and melted butter. Sprinkle over the casserole.
  7. Top with the remaining 1/2 cup of cheddar cheese.
  8. Bake for 25-30 minutes, or until golden brown and bubbly.
  9. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use a blend of cheddar and Monterey Jack cheese. You can also add cooked ham or bacon for extra protein.
