Blueberry Thyme Chicken is a delightful, flavorful dish combining juicy chicken breasts with a fresh blueberry and thyme sauce, perfect for a light yet satisfying meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook for 5-6 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Add fresh blueberries, chicken broth, balsamic vinegar, thyme leaves, and honey. Cook for 5 minutes, stirring occasionally, until the blueberries break down and form a sauce.
  5. Return the chicken to the skillet, spoon the blueberry thyme sauce over the chicken, and cook for another 2 minutes to blend flavors.
  6. Serve the chicken topped with the blueberry thyme sauce and garnish with extra thyme if desired.

Notes

For a richer flavor, serve with creamy mashed potatoes or a side of roasted vegetables. Fresh thyme enhances the aroma but dried thyme can be substituted if necessary.
