  • 1 cup boiling water
  • 1 cup blackberry puree (fresh or frozen)
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup blackberry puree
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Black food coloring gel (optional, for a deeper gothic look)
  • Fresh blackberries, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine buttermilk, oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Stir in boiling water and blackberry puree until smooth (batter will be thin).
  6. Pour batter evenly into prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  9. For the Frosting: In a large bowl, beat butter until creamy. Gradually add powdered sugar, beating until smooth.
  10. Add blackberry puree, heavy cream, and vanilla extract. Beat until light and fluffy. Add black food coloring gel, if desired, for a darker color.
  11. Once cakes are completely cooled, level the tops if needed.
  12. Place one cake layer on a serving plate. Frost the top with blackberry frosting.
  13. Top with the second cake layer and frost the entire cake.
  14. Garnish with fresh blackberries, if desired. Refrigerate for at least 30 minutes before serving.
